Chocolate Chip Chili
INGREDIENTS:
• 1 can (28 oz) crushed tomatoes
• 1 can (6 oz) tomato paste
• 1 cup water (add as needed to reach desired consistency)
• 1 can (15 oz) white beans, drained and rinsed
• 1 can (15 oz) black beans, drained and rinsed
• 1/2 cup sweet corn
• 1 tbsp vegan chocolate chips (adjust to taste,up to 2 tbsp for extra richness)
• 1/2 –1 tbsp mustard (regular, honey, or spicy mustard)
• 1/2 tsp lime juice (about 1/4of a fresh lime, adjust to taste) (can also use apple cider vinegar or dry red wine or red wine vinegar instead of lime juice)
• 1 tsp Nature’s Seasoning (adjust to taste)
• 2 cloves garlic, minced (or 1/2 tsp garlic powder if preferred)
• 1/2 tsp pink Himalayan sea salt (add more to taste as needed)
• 1/2 tsp dried basil
• 1 tsp paprika
• 1/2 tsp turmeric
If you like chili spicy hot, feel free to add heat via peppers or red pepper flakes.
INSTRUCTIONS:
Combine all ingredients and warm on low/medium heat for 30 minutes. Or, for really flavorful chili, cook a crockpot for several hours. Great if refrigerated overnight to serve the next day as well.
Serve with optional toppings such as vegan sour cream, vegan shredded cheese, chopped onions, cilantro, garlic croutons, or avocado
